So, we’ve all eaten that much turkey we’re practically sprouting feathers, so many mince pies we feel like we could burst, and have been poured out of taxis at least twice. So, allow me to introduce you to some quick, easy, healthy meals.

All of these dishes serve 1, and only need one pot to cook. Though do use some common sense and vary your quantities to suit your needs.

They are pretty vague, but the idea is, you choose what you do with the herbs, spices and side dishes. If you want to add a splash of wine, feel free. If you want to spice it up a bit, add chilli or Jalapenos. These are the very bare bones of the recipes, and it’s your imagination that will make them perfect for you. All of these dishes go well with any type of potato and salad too. Just remember, detox is all about getting more veggies in you.

Chicken, Chorizo and Vegetables – Add 1 Chicken Breast, Cubed Chorizo, Chopped Vegetables and Tinned tomatoes to an oven proof dish and bake at 200C for 30 minutes.

Salmon, Prawn and Cherry Tomato Bake – Place one Salmon Fillet, a small handful of Prawns, ½ a finely chopped onion and 1 knob of butter on tin foil, wrap and transfer to a preheated oven at 200c for 20 minutes.

Chicken Tika Skewers – Marinate Chicken Breast (diced into 1” cubes) in Tika Paste overnight in the fridge. Cube into 1” cubes your choice of Veggies, Skewer onto skewers and pan fry over a med/high heat for 15-20 minutes. (This is great with rice and salad in a pitta with some light yoghurt dressing).

Creamy Chicken, bacon and Veg – Slice Chicken Breast and bacon, cook through over a medium heat for 5 minutes, chop veggies and add to pan, add a generous dollop of reduced fat cream cheese. Simmer for 10 minutes.

Savoury Mince – Add minced beef to a pan, add veggies, stir well and cook over a medium heat for 10 -15 minutes. Make gravy, add to the pan and simmer for 10 minutes until thick.

Stuffed Chicken Breast – Make stuffing in a jug, Butterfly the chicken, fill with stuffing, wrap in bacon. Bake in oven at 200c for 20-25 minutes. Make more for a quick and easy sandwich filling.

Braised Steak in Gravy – Make beef gravy and pour into a large ovenproof dish, add steaks and cook in an oven for around 1 hour at 140C. This is also great warmed up on warm crusty baguettes for a fulfilling lunch.

Braised Lamb in Gravy – As above, but add Mint and Rosemary to taste.

Pork and Cider Kebab – Cube Pork into 1” pieces, marinate in Cider for at least 2 hours, Cube an Apple and Veggies and Skewer. Cook over a medium heat for 15 – 20 minutes.

Simple Chilli – Fry off Minced Beef, add onions and kidney beans (drained), add tinned chopped tomatoes and chilli powder to taste. Simmer for around 30 minutes.
